Small Business Profile: Ruby K’s Serves Breakfast And Lunch 7 Days A Week

Ruby Alexander met her husband Mike, who is from Los Alamos, while they were attending college at New Mexico State University in Las Cruces. They married in July 1985 and moved to Los Alamos.

She opened Ruby K’s Bagel Café at 1789 Central Ave., in downtown Los Alamos in 2005.

“Ruby K’s provides a local and lively hang out spot in Los Alamos where the community can get together and enjoy great food, coffee and smoothies,” Alexander said. “We pride ourselves on treating our customers as ‘guests’ and offer them warm, friendly and personalized customer service. Because we are locally owned and not a chain, we can do it ‘our way’ … the right way!”

Ruby K’s employs 30-35 employees; many are part-time high school students. Her weekday baker, Bernardo Torres, has been with her the longest. “He has worked for us off and on since 2006,” she said.

She would like every Los Alamos resident to know several things about her business.

“I’m always surprised to learn there are still Los Alamosans who don’t know we are open 7 days a week—offering both breakfast and lunch,” Alexander said. “I’m also not sure our locals know that our bagels and breads are made on-site, from scratch.”

She also wants the community to know that Ruby K’s offers a variety of catering services from bagel and cream cheese platters, to sandwich trays, box lunches and appetizer samplers.

“With trademark touches like our signature mini muffins and homemade bagel chips along with the friendliest, most talented staff ever, it’s no wonder we’ve gained a loyal following,” Alexander said. “The support we’ve received from the Los Alamos residents is phenomenal and we appreciate this support everyday!”
