A collective “Oh noooo!” rang out all over town this week as Ruby Alexander announced her plans to retire after 19 years operating her popular Ruby K’s Bagel Cafe.
“The support we have received from the Los Alamos community is phenomenal and we appreciate this support every day,” Alexander said.
Over the years Ruby K’s Bagel Cafe, at 1789 Central Ave. in the heart of downtown, has become a beloved Los Alamos institution.
“We built Ruby K’s and its brand with all our hearts,” Alexander said. “Now it’s time for me to let it go and let someone else begin Chapter 2 of the Ruby K’s story. I am forever grateful to all of my staff and family over the past 19 years, especially during the pandemic.”
Founded in 2005, Ruby K’s became a reality when it was recognized that Los Alamos needed something for the ‘bagel-hungry’.
“We needed to ignite a spark in Los Alamos by providing a café with super-yummy food, a clever menu, and a fun, ‘no-attitude’ atmosphere with top-notch customer service,” she said. “With trademark touches like our signature mini muffins and homemade bagel chips along with the friendliest, most talented staff ever, it’s no wonder we’ve gained such a loyal following.”
The menu at Ruby K’s includes signature homemade bagels and cream cheese, artisan sandwiches, soups and salads, fruit smoothies and cookies and assorted pastries.
Alexander spoke of her love for her customers.
“I treasure the memories that we have created together,” she said. “My hope is to find the perfect buyer to quickly pass the baton to … I couldn’t bear to just close Ruby K’s doors.”
