
This week’s Recipe: Spinach Chicken Roll-ups with Swiss Cheese Sauce

6 tablespoons butter, melted
6 tablespoons flour
1 ¾ cup milk
1 cup heavy cream
1/2 cup dry white wine
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon pepper
1 pkg frozen chopped spinach, drained and squeezed until very dry
2 cups chopped cooked chicken
3 cloves garlic, pressed
1 cup cottage cheese
1 egg, beaten
1/2 cup Parmesan cheese
8 oz Lasagna noodles(with curly edge if you can find them), cooked and cooled
6 oz shredded swiss cheese
Directions:
Make a roux (melt butter and mix in flour and cook for 1 minute). Add the wine and cook for 30 seconds.Add the milk,cream, 1/8 teaspoon nutmeg,salt, pepper. Heat 3-4 minutes until thick. Take the sauce off the heat and stir in the Swiss cheese, stir until melted.
Photo by Sue York/ladailypost.comIn a bowl add 1 cup sauce, spinach,chicken,cottage cheese,egg,1/4 cup Parmesan cheese, 1/8 teaspoon of nutmeg, garlic, and mix well.

Photo by Sue York/ladailypost.comSpray the bottom of the pan with vegatable spray. Put about a cup sauce in the bottom of the pan. Put 1/3 cup of mix on each noodle down 3/4 of length.
Photo by Sue York/ladailypost.comTake the noodle that is filled and roll it up, sliced in half(curley sides on outside) and put curly side up in pan.
Photo by Sue York/ladailypost.comFill the rest of the noodles cut the same way and put in pan. Put sauce on top and sprinkle with the rest of the parmesan cheese.
Photo by Sue York/ladailypost.comBake at 400 degrees for 20-25minutes, until heated through, and just a touch golden on top. You may need to put it under the broiler for just a minute to make it golden on top..
