Chamber Hosts Pig + Fig Grand Opening Feb. 25

The community is invited to the Pig + Fig Grand Opening celebration at 10 a.m. Thursday, Feb. 25 at 35 Rover Blvd. in White Rock.

The bakery and café serves breakfast and lunch Monday through Saturday as well as various food pairing dinners throughout the month.

Executive Chef/owner Laura Hamilton leads the kitchen with a menu that features sweet and savory dishes like their signature hot pig + fig, the triple pig quiche, assorted butter croissants, French-style macaroons, tarts, chocolate lava cake and many other mouth watering dishes that are sure to have you coming back for more.

Hamilton, a Texas native whose culinary career spans 18 years and two continents, is a graduate of the world-famous Le Cordon Bleu in Paris, France, co-author of several cookbooks, an acclaimed cooking instructor and now the owner of a gourmet restaurant. Chef Hamilton worked at Houston’s renowned Rainbow Lodge where she was nominated three times for Best Pastry Chef in Houston.

Hamilton has hired Jessica Martinez, a native northern New Mexican, as sous chef for Pig + Fig. Growing up in the kitchen, Martinez found she had a passion for food at an early age and by the age of 12, she was already a certified cake decorator. Since then, she has worked in many local eateries including Buffalo Thunder, Pajarito Brewpub and Cottonwood on the Greens.

Martinez also grew up raising farm animals and participating in 4H competitions so her unique background made her a natural fit for Pig + Fig. Hamilton said she is excited to open Pig + Fig in White Rock where she is combining her passion for gourmet comfort food with her love and appreciation of wine.
