Ruby K’s Bagel Café is about to reach a milestone and achieve a goal. The restaurant is approaching its eighth anniversary and will extend their hours.

Ruby K’s will have its “Eighth Birthday Party Celebration” Feb 22 and 23. The restaurant will serve samples of its new menu items and smoothies. 

The celebration also will include prize drawings, face painting, glitter tattoos, balloon animals and cupcake decorating.

Ruby K’s will stay open until 7 p.m. beginning March 1.

“We couldn’t have made it happen without our loyal customers.” owner Ruby Alexander said.

“My older kids always pout when they find out my youngest and I get in a morning visit to Ruby K’s, since it had always been closed when they got out of school. They will be so happy!” longtime customer Shana Cooper said of the extended hours.

One of the main reasons that Alexander wanted to extend the hours was to reach the after-school crowd by offering tasty, fun snack-type items. 

In preparation for the extended hours, the entire Ruby K’s staff has been thinking of fresh ideas for new menu items.

“We will still have our full menu available for our late afternoon and early evening diners, but recognize our customers may just want a quick bite. Our new grab and go menu items will serve this niche,” Alexander said.
