SANTA FE – Colorful and cross-disciplinary arts collective Meow Wolf announces its first voyage into the savory world of the Santa Fe culinary scene: Trinity Kitchen, a new food truck serving authentic Cajun cuisine and other southern favorites based in the parking lot outside the Art Complex and House of Eternal Return on Rufina Street.
Soft open is Monday, May 22 with Grand Opening on Friday, May 26 when Meow Wolf launches Summer In The Multiverse featuring a variety of live performers daily throughout the already hyper-dynamic and highly popular creative space.
Signature Trinity Kitchen dishes include the most soulful of favorites—Po Boys, Gumbo, Étouffée, Fried Chicken & Waffles, Boudin, Beignets, and Pecan-Smoked Baby Back Ribs—which are not readily found in the southwest and fill a rare void for the Santa Fe palate. Trinity Kitchen will purchase local, responsibly-sourced ingredients when available from suppliers and cook everything from scratch in-house.
Eliot Chavanne helms Trinity Kitchen. He started his career in his hometown of Shreveport, Louisiana washing dishes in high school for his cousin’s southern restaurant where he learned knife skills, cooking techniques and a passion for the culinary arts. Chavanne moved on to an upscale French restaurant as sous chef, apprenticing under a classically trained chef. After relocating to Santa Fe, he worked for Whole Foods as a butcher and seafood monger before transferring to open a new store in New Orleans as Meat & Seafood buyer where he learned the rewards of sourcing responsibly-raised meats and properly-fished seafood.
Chavanne is now back in Santa Fe with Meow Wolf and joined by Shreveport childhood friend Connor Black, whose background in the hotel and hospitality industry as well as restaurants and catering for large audiences with top quality products and unwavering customer service is a natural fit. Black left the opening of a new oyster bar in Shreveport to be part of Meow Wolf’s first food venture.
“Meow Wolf is a quality art experience like no other,” Chavanne said. “People like to hang out with friends and family for a while and they should have easy access to quality food and beverages to ensure the best of times. Trinity Kitchen is thrilled to be a part of this happening scene and I’m honored my old friend Connor is with us to offer the best, most authentic Cajun cuisine right here in Santa Fe.”
Trinity Kitchen also will attend notable events such as Santa Fe Bike & Brew, Spanish Market, International Folk Art Market, Albuquerque International Balloon Fiesta and other local festivals.
