  • Catherine LeClaire Memorial Organ Fund Concert Set for May 19

The public is invited to attend an upcoming musical concert hosted by Immaculate Heart of Mary (IHM) Catholic Church of Los Alamos - the third in its series of free concerts to raise money for the Catherine LeClaire Memorial Organ Fund.

The concert will take place at 4 p.m. Sunday, May 19 at IHM, and will showcase the talents of a number of fine musicians from IHM and other churches and musical groups from around northern New Mexico.

Among the featured groups will be an accapella group of 12 voices “Memorare”

Frozen Pina Colada Pie

2 large gram cracker crusts
½ cup sugar
12 oz cream cheese (softened)
2 teaspoons of rum flavoring extract
3 cups of sweetened coconut
2 cans of crushed pineapple in syrup (drain ONE of the cans)
8 oz French vanilla flavored cool-whip (or regular if you can’t find the French vanilla)

Spread the coconut out on a baking sheet and place under broiler to toast. Watch this very carefully, mix as needed. Set aside to cool.

As a retired solo traveler, cost is my main concern when I want to go anywhere.

A hotel room costs almost as much for one as for two, making traveling alone rather expensive. Hostels and pensiónes can also be a bit pricey even when the bathroom is shared.

From my perspective, the best way to extend travel funds is to travel slowly. Find an area of the world that sounds intriguing, rent a small furnished apartment and stay a while.

The Craig Martin Experience jazz ensemble returns to the Blue Window Bistro Saturday, April 20 with their unique blend of classic swing, hard bop and funky jazz.

Tickets are $15 per person and dinner reservations are required.

This is the band’s third appearance at the restaurant and they will break out plenty of new tunes for the audience.

Cream of Asparagus Soup made with Grilled Asparagus

*** You must have either a blender or a food processor to make this soup.
2 pounds of asparagus
Olive oil
3 tablespoons of butter
3 ½ cups of chicken broth
½ cup chopped onions
2 cloves of garlic, pressed
Salt and Pepper to taste
1 cup cream
3/4 cup parmesan cheese (reserve ¼ cup for garnish)

Clean the asparagus, and remove the woody ends and discard.
