Food on the Hill: Pineapple Strata

This Week’s Recipe:

Pineapple Strata

Ingredients:
 
9 slices of good white bread with the crusts taken off and torn in to about ½ – ¾ inch pieces
1- 20 oz. can of crushed pineapple, drained very well
4 large eggs
¼ cup of melted butter
1 cup sugar
 
Directions:
 
Put the bread pieces in a medium bowl and set aside. Mix together pineapple, sugar, butter, and eggs. Mix this very well. Pour over the top of the bread pieces and GENTLY mix together for just a few turns.

Spray a tart pan with non-stick vegetable oil and gently put the bread mixture into the dish. Cover the dish in plastic wrap and refrigerate over night.

In the morning take the plastic wrap off and cook at 350 degrees for 45 minutes. It will be done when you see golden peaks on the top and it looks set. Serve with a good breakfast.
