Food on the Hill: Berry Tiramisu

This Week’s Recipe: Berry Tiramisu

Ingredients:

Small jar of raspberry preserves
12 oz. of mascarpone cheese, at room temperature  
½ cup of orange juice
½ cup sugar
1 teaspoon vanilla extract
16 oz. of heavy whipping cream, cold
45-50 ladyfingers, dried
2 ½ cups of orange juice
½ cup Grand Marnier liqueur (optional)
16 oz. fresh raspberries
16 oz. fresh strawberries
¼ cup sugar

Directions:

In a large mixing bowl, mix together with a hand mixer, the whipping cream and sugar until you start to get peaks. In another large mixing bowl, mix together with a hand mixer, the preserves, cheese, vanilla,  ½ cup orange juice. Mix until well blended, and lighter in texture.

Gently combine the two mixtures with a spatula. Fold the whipping into the cheese mixture. Set aside.

In a small bowl mix together the 2 ½ cups of orange juice and the liqueur. Put a thin layer of the cheese mixture into a 9 X 13 pan. Dip one-half of all the ladyfingers into the orange juice mixture, one at a time and place them in rows in the pan.

Spread a layer of the cheese mixture over the lady fingers.

Set aside about 1 ½ cups of the nicest of each of the berries. Take the rest of the berries and in a small food processor, chop them.  Add the ¼ cup sugar and mix well.

Spread the chopped berries on the middle layer of the cheese in the pan.

Dip the other one-half of the ladyfingers into the orange juice mixture, one at a time and place them in rows going the opposite way in the pan.

Spread a layer of the cheese mixture over the lady fingers. Chill for about 8 hours. Just before serving, slice the strawberries that are left and place them on top. Add the raspberries to the top.
